Ingredients

  • 3 tablespoons olive oil
  • 2 medium onions, chopped
  • 1 tablespoon minced garlic
  • 3/4 pound smoked, baked or country ham cubed
  • 2 (14.5-ounce) cans of turnip greens, undrained (recommend Glory Brand turnip greens if available)
  • 2 (15.5- ounce) cans great northern beans
  • 2 red potatoes, diced
  • 4 (14.5-ounce) cans chicken broth
  • Salt and ground pepper to taste
  • Cajun seasoning to taste
  • 2 tablespoons of granulated sugar

Directions

  1. In a soup pot, sweat olive oil, onions, garlic, and ham on low heat.
  2. Add turnip greens, beans, potatoes, chicken broth, and bring to a boil on high heat.
  3. Once boiling, turn down to medium heat. Add salt, pepper, cajun seasoning, and sugar.
  4. Simmer for appoximately 30 minutes.
  5. This recipe makes a large quantity and can be cut in half. Serve with cornbread.
